Although production now takes place in a dedicated workshop, the original boutique still welcomes you at 7 Boulevard Victor Hugo. The Origin and Story of Le Petit Duc’s Calissons

The Calisson of Saint-Rémy, a delightful sweet emblematic of the Provence region, has a history as rich as its flavor. Its story began in 1991, infused with family traditions and artisanal know-how.

Before the rise of modern manufacturing, in the 19th century, sugar was rare and used sparingly.
After extensive research and many hours devoted to studying traditional Calisson d’Aix recipes, we created our ideal version, which we named the Calisson de Saint-Rémy. The result of this passionate work is a tender, flavorful, and delicately sweetened treat.

Where Does the Unique Shape Come From?

Thirty years ago, when we first started making calissons, Le Petit Duc didn’t have a traditional calisson press. Lacking the means to create the classic lozenge shape, we rolled out the dough and cut it into square pieces using a guitar cutter.

This accidental square shape was such a success that we never changed it. Today, it’s become a signature element of our creation.

Handcrafted with Care

From the beginning, Calissons de Saint-Rémy have followed the same artisanal recipe, preserving time-honored expertise. Every day, these sweet delicacies are handmade in a dedicated workshop, where the dough is prepared with meticulous attention.

The secret to the calisson’s tender texture lies in the careful craftsmanship at each stage. Each piece is precisely cut and gently coated with a thin layer of royal icing, adding the signature glossy sweetness of the calisson.
