The recipe has been worked on for a long time in order to obtain these Fruit pastes of Provence : when the pectin starts to gel, the still warm fruit paste is placed in frames so that it takes the shape of it. A long gelling process follows, cutting out small square shapes, and adding sugar to all sides of the fruit paste.
This little delicacy is ideal to taste before, during and after a sport effort to recharge the batteries ! It can also be enjoyed with a good hot or cold drink.
