Unlike a simple black olive tapenade, this recipe uses only olives of the Tanche variety, the famous Nyons olives. Recognizable by their wrinkled appearance and dark color, these black pearls offer a fruity taste and unique flavor.

    Nyons PDO olive tapenade is prepared with care, using only the finest ingredients. Nyons olives are picked when ripe, then carefully pitted and crushed to obtain a creamy, unctuous texture.
