The Nyons olive tapenade is not a simple black olive tapenade. The olives used in this recipe are exclusively those of the Tanche variety, the Nyons olive, a black pearl with a wrinkled appearance and a fruity taste. The black olive from Nyons is the first PDO in France since 1994.
