Before the industrial era, in the late 19th century, sugar was a rare and precious commodity, used sparingly. We followed the same principle during the many hours spent studying pre-Aix calisson recipes, which ultimately led us to create our Calisson de Saint-Rémy — low in sugar, exceptionally soft, and with a delicious almond flavor.
