Discover Moulin Ramade's delicious PDO Nyons olives, a culinary treasure trove from the Nyons region. Nyons olives benefit from an Protected Designation of Origin (PDO), guaranteeing their exceptional quality and deep connection with the local terroir.    
Nyons PDO olives are famous for their unique taste and tender, fleshy texture. Grown and harvested with care in the region's orchards, these olives are known for their subtly fruity flavor and distinctive aroma. Their soft, melt-in-the-mouth flesh makes them a real pleasure to eat.

The olive variety grown and processed by Moulin Ramade is La Tanche, an olive variety unique to Nyons. A true symbol of the town, olives are harvested from November to January, when the fruit reaches maturity. The larger ones are destined for the table, the smaller ones for oil. The typical taste of this large-stoned fruit, with its aromas of undergrowth and/or red fruit, made it the 1st French olive to be awarded an AOC and then an PDO in 1994.      

The PDO awarded to Nyons olives guarantees their geographical origin and traditional production methods. The olives are picked by hand, then sorted and prepared with meticulous care. Once sorted and graded, the olives are immersed for a minimum of 6 months in a mixture of water and salt, without chemicals or preservatives, to debitterize them. This process removes the bitterness from the olives, allowing the Tanche to develop its full aroma.

Nyons PDO olives are versatile in the kitchen. They are ideal for salads, cheese platters, aperitifs or even as a tasty snack on their own. Their delicate flavor and firm texture make them an ideal ingredient for Mediterranean dishes, tagines, pizzas and many other recipes.  

The Moulin Ramade, located in Nyons, 14 km from the Fabrique, has been an institution in the town for over 100 years !
