A big calisson of Provence with the good taste of almonds ...
Arnaud Soubeyran's calissons, with a finely layer of frosting, are made from a Provençal recipe with the right ingredients, such as candied fruits and almonds, following a bain-marie cooking in copper cauldrons. A pure delight not to share!
Ingredients: candied melons (melon, sugar), almonds, crystal sugar, invert sugar syrup, candied oranges (orange, sugar), glucose syrup, unleavened bread (potato starch, water, olive oil) white egg. Possible tracks of hazelnuts.
