Recipe by Pol Adam, pastry chef to King Albert I of Belgium, from the early 20th century. From the family of baked almond paste, chocolate sticks are characterised by their missing elements, flour and butter replaced by almonds which provide the fat and the binder.
The stick hides its game : bite once to prepare your palate for the second bite where all the spicy notes of the chocolate will finally come out.

Ingredients : sugar, almonds, dark chocolate 25% (cocoa 60% minimum, sugar, vanilla extract), eggs.
Produced in a factory that handles almonds and dairy products, gluten and other nuts.
