Nyons Olives AOP
Description
Discover the delicious Nyons AOP olives from the Moulin Ramade, a culinary treasure from the Nyons region. Nyons olives benefit from a Protected Designation of Origin (AOP), guaranteeing their exceptional quality and deep connection to the local terroir.
Nyons AOP olives are famous for their unique taste and tender, meaty texture. Carefully cultivated and harvested in the region’s orchards, these olives are known for their subtly fruity flavor and distinctive aroma. Their soft, melting flesh makes them a true gastronomic delight.
The olive variety grown and processed by Moulin Ramade is La Tanche, a variety unique to Nyons. True symbols of the town, the olives are harvested from November to January when the fruits reach maturity. The larger ones are destined for the table, while the smaller ones are used for oil. Its distinctiveness and taste, a large-pitted fruit with aromas of undergrowth and/or red fruits, allowed it to stand out by becoming in 1994 the first French olive to receive an AOC and then AOP designation.
The AOP granted to Nyons olives guarantees their geographical origin and traditional production method. The olives are handpicked, then carefully sorted and prepared. Once sorted and calibrated, they are immersed for at least 6 months in a mixture of water and salt, without any chemicals or preservatives, to remove their bitterness. This process aims to eliminate the olive’s bitter side so that La Tanche can fully develop its aromas.
Nyons AOP olives are versatile in the kitchen. They are ideal for enhancing salads, cheese platters, appetizers, or even enjoyed alone as a tasty snack. Their delicate flavor and firm texture make them a perfect ingredient for Mediterranean dishes, tagines, pizzas, and many other recipes.
Moulin Ramade, located in Nyons just 14 km from La Fabrique, is an institution in the town, having been present for over 100 years!
