Before the time of manufacture, at the end of the 19th century, sugar was still a rare commodity, used with caution. We followed the same principle during the hours we spent studying the recipes before the calisson d'Aix to finally end up with our Calisson de Saint-Rémy ... not very sweet, extremely soft and with a delicious almond taste. .
