Small spelt

Small spelt, also known as the caviar of cereals, is one of the specialities of the Ventoux.    

This cereal is rich in vitamins, magnesium, iron and mainly proteins and has an excellent taste.
With its tender and intense flavour, this robust cereal will suit all your dishes. Cultivated for thousands of years, small spelt from Mont Ventoux has the particularity of still being grown in the traditional way.    

Slipped into a savoury or sweet culinary preparation, it is particularly pleasant as an accompaniment to many dishes. In salads, cakes, breads, but also in Rissotto and tarts, it reveals all the flavours of the preparation.
